Cayla's Kitchen: Pike Chowder
A cozy way to warm up after a day on the ice, R3 Coordinator Cayla Bendel shares this flavorful pike chowder recipe.
Ingredients
1 lb. pike (or other fish), frozen
2 slices bacon, chopped
2 tbsp. butter
½ c. onion, diced
½ c. carrots, sliced
2 tbsp. garlic, minced
2 potatoes, peeled and cubed
2 c. fish broth (seafood stock)
2 c. corn
1 tbsp. seafood seasoning
Salt and pepper
1½ c. cream
1 tbsp. cornstarch
Directions
1. Sauté bacon in butter until crispy.
2. Add onion, carrots and garlic until cooked.
3. Add frozen fish, potatoes, corn, broth, seafood seasoning, salt and pepper. Bring to a boil and let simmer until potatoes are tender, 15-20 minutes.
5. Add cream and corn starch, simmer to thicken.
Recipe Note: If you cannot find seafood stock (fish broth), or would like a milder flavor, substitute chicken stock and clam juice.
